If there is one thing you all should know about the boys and I by now, it’s that we love camping. Our 50 day road trip and most of our 70 day road trip consisted of nothing but camping out under the stars. While we love camping, cooking exciting meals that the family will love can be challenging. You are limited to a grill in most cases, and you can’t bring the whole kitchen full of spices with you, so I am always looking to adapt simple recipes that can be cooked up in a snap like the one below.
When I am coming up with a new camping recipe, I try to ultilize ingredients that are already cooked, at least partially. The worst thing that could happen is serving undercooked meat, and making everyone sick. That is why fully cooked meats that have built in flavoring are my items of choice when shopping for a camping meal.
Johnsonville Fully Cooked and Smoked Sausage is the perfect ingredient for a camping meal, because not only are they already fully cooked and safe to eat, but they come in a wide range of flavor combinations that means you don’t have to bring a load of spices and extras to make them taste good.

Some of my favorite flavors include the New Orleans Spicy Smoked Sausage Links, Chili Cheese Smoked Sausage Links, Polish Kielbasa Links and the Naturals: White Cheddar Smoked Sausage. For my Mexican-style Sausage Foil Packet Meal Recipe though, I used the Jalapeno and Cheese Smoked Sausage Links.
Mexican-style Sausage Foil Packet Recipe
- Pre-cooked Mexican or Spanish Flavored Rice
- Onions Sliced
- Bell Peppers Sliced
- Johnsonville Jalapeno and Cheese Smoked Sausage Links (sliced)
- Canola Cooking Spray
- Aluminum Foil
- Shredded Chese (optional)
1. Lay a large sheet of aluminum foil down on a table or counter.
2. Spray the side of the aluminum foil that is facing up generously with canola cooking spray.
3. Lay down a generous layer of sliced onions and peppers in the center of the piece of aluminum foil.
4. Place a layer of sliced Johnsonville smoked sausage over the top of the onions and peppers.
5. Put a second layer of aluminum foil on top of the layer of smoked sausage and spray it generously with canola cooking spray.
6. Place a 1/2 cup to a cup of pre-cooked Mexican or Spanish flavored rice on top of that layer of aluminum foil.
7. Gather the edges of the aluminum foil layers and fold up to make a packet. Be sure to close it tight while leaving some space at the top for the ingredients to steam while on the grill.
8. Place the packets on the grill over a medium low flame. Cook for about 10 minutes, lower heat if you feel that it is too high after the first few minutes. You just want to cook it enough to char the vegetables on the bottom while steaming and heating the sausage and rice.
9. Remove the foil packets from the heat, open carefully and mix the rice into the packet with the vegetables and meat. Sprinkle with cheese if desired. Enjoy!
