If you have stuck around this long, then you know that I am on a quest to become more like Martha Stewart and less like the microwave loving mommy I usually am in only 90 days! I did want to mention that you may see me skipping a day here or there and that is because on those days I was not cooking. On Saturday we were tailgating with my sister and last night we ate at church. Also, every Wednesday we have a traditional family outing to a local country buffet so I am only counting the 90 days that I actually cook.
Today is day 3 and I made BBQ pulled pork in the crock pot. I love the Crockpot because it is so convenient and it makes your house smell yummy too. I just throw something in there in the morning and by the time everyone is home in the evening, dinner is good to go. This is a really simple recipe and it made a ton of food. We had lots of leftovers that Matt took to work for the guys the next day, but you could freeze them too.
1 Pork Roast (you can use any size you want, but ours was about 3 pounds and was a lean cut of meat.)
1 Onion Chopped
1/2 cup vinegar
1 cup BBQ sauce
Place pork roast in the bottom of the Crockpot with the chopped onion around it. Salt and pepper as you like and add a good amount of garlic powder. This is more or less done to your own personal taste. Cook on high for 6 hours. After about 3 hours, you can take a fork and shred the meat for better cooking. You can add a tad of water to the bottom if you like, but it is not necessary.
When the six hours is up, drain the meat and add 1/2 cup vinegar and 1 cup of BBQ sauce. We used 1/2 cup Country Bob’s and 1/2 cup of a Honey BBQ sauce that we had here to make it a little sweeter. Cook on low for one hour and then serve.
I served ours on bread with some macaroni and cheese and brussel sprouts, but you can serve it with anything from onion rings to mashed potatoes.
